Chocolate Cake With Coconut Cream & Orange-Coconut Morsels

This chocolate cake is a very easy luscious cake,the taste of chocolate and the cake moist texture combined with a coconut cream and aroma of the orange zest makes this cake heavenly dessert. Orange and chocolate together always remind me of the orange flavored chocolate that is usually shaped into wedges and the wedges are all wrapped with an orange colored foil to resemble an orange. This chocolate is only available during Christmas holidays, and this was the influence for this chocolate, orange and coconut cake. I used my mother’s orange coconut morsels and incorporated it to such holiday and winter influenced chocolate staple and came up with this super delicious cake.

Ingredients

    Cake
  • 1+1/2 cups buttermilk
  • 1/2 cup vegetable oil
  • 1+1/2 cup warm water
  • 4 large eggs
  • 2 teaspoon vanilla
  • 3 cups all purpose flour
  • 3 cups sugar
  • 1+1/2 cup unsweetened coco powder
  • 1 tablespoon baking soda
  • 1+1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Garnish
  • 2 cups 35% cream
  • 1/3 cup powder sugar
  • 2 teaspoon coconut extract
  • 1/3 cup unsweetened coconut
  • Orange coconut morsels Orange Coconut Morsels
  • Gold dust

Instructions

  1. Cake: Preheat oven to 350 F. meanwhile in a large bowl place all the cake's dry ingredients except the sugar and mix well and set aside.
  2. In a large bowl pour the buttermilk, oil, warm water and use a whisk and mix for 1 minute. Add eggs one at a time and mix well then add sugar, vanilla and mix well. Add the dry ingredients to the wet ingredients in 3 additions and mix well after each addition until fully blended and a creamy batter forms.
  3. Brush a 9inch round cake pan with 1 tablespoon of vegetable oil, pour the batter in the pan, place the pan on a baking tray and place the tray on the oven's middle rack and bake the cake for 35-40 minutes or until test comes out clean. Take out of the oven place on cooling rack and cool for 30 minutes, take out of the pan and place it on a cooling rack for 3-4 hours until its cold.
  4. Pour cream, powder sugar and coconut extract in a large bowl, use a whisk and whip until thick and stiff.
  5. Cut the cake into 3 layers, place the first layer on a serving plate, cover with cream and some coconut, place the next layer over the cream, cover this layer with cream and coconut too. Place the last layer and decorate with more cream, garnish with the orange coconut morsels and sprinkle with gold dust.
