Red Berries Juice

Who doesn’t like berries ?! 😶  This juice is perfect in summer, when berries of all sorts and types are in season and available for an affordable price. The flavor and aroma of the berries in the summer is much sweeter and stronger than that in winter.

Usually in summer I try to buy Ontario grown berries, and most of the times I buy my fruits and crops from the near by farm. Its fun to go pick and harvest your fruits and vegetables from the farm and the flavor is much better.

Anyways, I love strawberry and try to create anything with it, and I think my skin color is changing to pink because of eating to much of it.This juice tastes clean and refreshing makes you feel like drinking the whole pitcher all by yourself. The soda water in this recipe makes it lighter and fizzy, which makes it taste like a homemade healthy pop.

I wanted to create a dark berry version of it with blueberry and blackberry but unfortunately didn’t get the chance to, but don’t worry I’ll make it next summer. Promise !

Red Berries Juice

Prep Time: 20 minutes

Yield: 5 cups

Serving Size: 1 cup

Ingredients

    Juice
  • 3 cups strawberry
  • 3 cups raspberry
  • 1 cup sugar
  • 1 lemon juice
  • 3 cups soda water
  • Garnish
  • few stems thyme
  • 1/4 cup blueberry
  • 1/4 cup raspberry
  • 1/4 cup strawberry

Instructions

  1. Wash and dry the berries, place the berries for the juice in a juicer and extract juice. For a more clear juice pass it through a fine sift.
  2. Add lemon juice and half of the sugar and use a spoon and mix the juice until all the sugar dissolves. Add more sugar if needed. Add the soda water and continue mixing just until well blended.
  3. Pour the juice in cups, garnish with the washed berries, thyme leaves and stems, add ice cubes and serve.
