Spicy Tilapia-Vegetable Rice

Wednesdays are seafood days !! This have been part of my weekly menu plan for over 12 years. By now everyone knows that if they’re over at my place on Wednesday, they’ll have a seafood main course for dinner. This scrumptious and easy one pot dish is a complete meal that includes protein, carbohydrate, and vegetables all at once.

I love making this delicious savory fish and rice dish because it’s spicy, loaded with vegetables and layers of flavor.

This rice tastes like Indian Biryani rice dishes, loaded with spices, vegetables and fish, it can also be made with shrimp.

Spicy Fish Rice

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour, 20 minutes

Yield: 4 servings

Serving Size: 1 filet and 1 cup vegetable rice

Ingredients

  • 4 Tilapia filet
  • 2 cups basmati rice
  • 1/2 green bell pepper minced
  • 1 large tomato minced
  • 1 large onion minced
  • 1 clove garlic minced
  • 1 red hot chili minced (optional)
  • 1 tablespoon tomato paste
  • 1/4 cup cooking vegetable oil
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground cardamom
  • 1/4 cup flour
  • salt and pepper to taste
  • 2 tablespoons parsley leaves

Instructions

  1. Wash, peal, and mice vegetables accordingly.
  2. Pat dry the fish filets with a kitchen paper towel then sprinkle both sides with some salt, pepper, turmeric, and flour.
  3. In a large deep nonstick pot over medium high heat, pour the oil and fry the fish for 2 minutes on each side until it's golden, remove from pot and place over a kitchen paper towel.
  4. In the same pot and over medium high heat saute the minced onion for 2 minutes then add garlic and saute for 1 minute, add green bell pepper and tomato and saute for another 2 minutes. Add tomato paste, cardamom, salt and pepper with continues stirring fry for 2 minutes. Remove the sauce from pot and set aside.
  5. Wash the rice, strain and place in the pot over high heat, add 2 cups of warm water and 1 teaspoon of salt cover the pot and bring to boil. Reduce heat to medium low, stir the rice then pour sauce over the rice, cover the pot again and cook rice for 30 minutes. Plate, garnish with some parsley and serve.

Notes

* You can add other vegetables like peas, mushrooms, potato or carrot cubes as well.
