Basil Pesto Brioche Bread

Ohhhh my! this bread is unbelievable. Well it’s a complete breakfast, a quick lunch, a brunch or even with your afternoon tea. It’s so flavorful and will taste even better with some butter or a dip in extra virgin olive oil.

Make this bread into small personal buns, braids, loafs or one big loaf.

In our house we love pesto and I usually make mozzarella pesto cheese sandwich for my sons breakfast, so I came up with this bread where the pesto and the cheese are part of the bread and instead of using mozzarella I use Parmesan cheese.

When preparing pesto I don’t put any garlic in it, so if I want to use it for a cheese sandwich or bread, I don’t really want the garlic flavor. You can simply add a minced clove of garlic to the pesto and use it for pasta dishes or any other dishes.

Yield: 1 loaf

Ingredients

    Pesto
  • 1 cup basil
  • 1/4 cup pine nut
  • 1/3 cup olive oil
  • 1/2 cup Parmesan cheese
  • Dough
  • 3+1/3 cup all purpose flour
  • 300 ml warm water
  • 1 tablespoon sugar
  • 1+1/2 teaspoon active dry yeast
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 2 tablespoon Parmesan cheese

Instructions

  1. Add sugar to the warm water, mix well then add active dry yeast, cover and let stand for 5-7 minutes.
  2. Sift flour in a large bowl, make a well in the center, pour olive oil and yeast water, use a spoon and mix. Add salt and continue mixing until dough forms. Place dough on a clean counter top and knead for 8 minutes.
  3. Place the dough in an oiled bowl, cover with a plastic wrap and place in a warm place and let the dough rest for 2 hours or until it doubles in size.
  4. Mean while prepare the pesto. Use a food processor and place all the pesto ingredients in it and processes until smooth and creamy, cover and chill in the fridge.
  5. Take the out of the bowl and using a rolling pin and roll out the dough into a rectangle, spread the pesto on the dough, roll and shape as desired.
  6. Place the bread on an oven tray. Egg wash the bread and let it stand in a warm place for 1 hour to proof and rise and double in size again. Sprinkle with the Parmesan cheese.
  7. Preheat oven to 400 F. Place the bread tray on the oven's middle rack and bake the bread 20-30 minutes until golden brown and fully baked and crispy.
