These cute little star cookies look so pretty with the tiny black poppy seed dots on them. Well although this cookie has avocado in it but I personally don’t get much of the avocado flavor and all I really feel is that the avocado just makes the cookies softer and creamier. These cookies have lemon juice, so they taste sweet with a hint of sour, soft and creamy with little pops of crunch from the poppy seeds.
I have seen this recipe on a cooking blog about 6 years ago, I don’t really remember the name of that blog. All I remember is that I changed the recipe measurements from weight in grams to volume (cups) measurement and then recorded it in my notebook. Here I am sharing it with you all, so try it and tell me how do you like it! 🙂
Ingredients
- 1+3/4 cup all purpose flour
- 1/2 cup butter
- 1/2 an avocado
- 2/3 cup sugar
- 1/2 cup+ 2 tablespoons cream cheese
- 2 tablespoons lemon juice
- 1 tablespoon poppy seed
- 1/2 teaspoon baking powder
Instructions
- In a large bowl place butter and sugar, use a mixer and mix until creamy. (about 2 minutes)
- Add avocado and mix for 1 minute, add cream cheese and mix for 2 minutes. Add lemon juice and poppy seed mix for 30 seconds.
- Use a sift and sift flour and baking powder then add to the avocado mixture and mix for 3 minutes until well mixed and creamy.
- Preheat oven to 375 F. Meanwhile use a pipping bag with your desired nozzle attached, put half of the cookie dough in the bag.
- Line a large baking tray with baking paper and start pipping out the cookies 1 inch apart. When all the dough is shaped place the tray on the oven's middle rack and bake for 10 minutes.
- Take out of the oven remove cookies from the tray and place on a cooling rack, plate and serve.
